Moringa is a small tree, capable of reaching about 35 feet in height if allowed to grow freely. The moringa tree has small leaves arranged along a green stem. These moringa leaves are the most-used, most-prized part of a tree that let’s nothing go to waste. The entire tree, in all its various parts, has a use as food or medicinals and what’s left after these have been used up is a soft wood that burns nicely into the charcoal that many cultures prefer for cooking. If not used as a fuel, if left lying on the ground, it decays and returns to its source in a fairly short time.
When people say “moringa”, they are most often talking about the leaves. Moringa leaves can be eaten fresh, right off the tree or mixed into a salad, and they can be cooked as a vegetable similar to spinach. Dried moringa leaves are fairly fragile and can turn to a fine powder if handled too much or too roughly.
